Spinach Lasagna Roll-ups

I had high hopes for this one, but it turned out pretty bland. I had some cottage cheese on hand to use up, so I used it instead of ricotta. I'd always heard it was a decent substitute, but I have a feeling it contributed to the "meh" factor. I also used the cheapo-reapo Kraft parmesan cheese in the cylindar. Some fancy Parmigiano-Reggiano would have also made a huge difference.  And some more spices! I can't believe I made something with tomato sauce and didn't sprinkle in any red pepper flakes. 


The nice thing about this meal is that it made tons of extras. In our first meal, John ate two and I ate one. And I was able to package up 4 extra meals to freeze for later! I did find that the full box of lasagna noodles was way too much. I was left with almost half of the noodles, cooked but with no filling left. I think I'm going to try to freeze them to use later. Not sure how that will work, but it's worth a shot. I hate throwing out food.

    1. We've eaten the leftovers of this a couple times, and I think this is one of those that tastes better the second time around! (Or maybe I'm just not as picky when I'm eating it for lunch.) :)
